      • 2 tbsp (30g) oil
      • 1/2 cup (113g) melted butter
      • 1 cup (255ml) buttermilk
  • Steps:
    1. Prepare Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, light brown sugar, white sugar, and 1 cup of chocolate chips. Whisk until well combined.
    2. Prepare Wet Ingredients: In a separate bowl, whisk together the eggs and sour cream until smooth. Add lemon zest, vanilla extract, maple syrup, oil, melted butter, and buttermilk. Mix until fully incorporated.
    3. Combine Wet and Dry Ingredients: Add the wet ingredients into the bowl of dry ingredients. Gently whisk until just combined. Don’t over-mix.
    4. Rest the Batter: Cover the bowl with plastic wrap and let it rest at room temperature for 1 hour for the best results.
    5. Preheat Oven and Prepare Muffin Tin: Preheat the oven to 425°F (220°C). Line a muffin tin with 12 paper liners.
    6. Fill Muffin Liners: Use an ice cream scoop to evenly distribute the batter into the prepared muffin liners. Fill each liner almost to the top. Sprinkle the remaining chocolate chips on top of each muffin.
    7. Bake Muffins: Place the muffin tin in the preheated oven and bake for 5 minutes at 425°F (220°C). Then, reduce the oven temperature to 375°F (190°C) and bake for an additional 15-17 minutes or until the muffins are golden brown or a toothpick inserted into the center comes out clean.
