Chocolate Fudge Loaf Cake Recipe

Ingredients:

  • 1 cup (150 grams) all purpose flour
  • 1/4 cup (25 grams) dark cocoa powder, sifted
  • 1/4 tsp (1.2 grams) baking soda
  • 3/4 tsp (3 grams) baking powder
  • 7 tbsp (100 grams) unsalted butter
  • 2/3 cup (107 grams) dark or semi-sweet chocolate (I used both)
  • 1 tsp salt
  • 1/2 cup (100 grams) light brown sugar
  • 1/2 cup (100 grams) granulated sugar
  • 2 eggs
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • 1/2 cup (110 grams) heavy cream
  • 1/2 cup (120 grams) buttermilk
  • 1 cup semisweet chocolate chips

Steps:

  1. Preheat and Prepare the Loaf Pan
    • Preheat the oven to 300°F.
    • Grease a 9×5.5-inch (1.5qt) loaf pan with baking spray and line it with parchment paper. Set aside.
  2. Melt Chocolate and Butter
    • In a medium saucepan over medium-low heat, melt the chopped chocolate and butter until smooth. Set aside and allow to cool.
  3. Combine Dry Ingredients
    • In a large bowl, combine the dry ingredients: flour, sifted cocoa powder, baking soda, baking powder, granulated sugar, light brown sugar, and salt. Whisk until fully incorporated.
  4. Whisk Eggs and Add Wet Ingredients
    • In a separate bowl, whisk the eggs with lemon zest. Add the remaining wet ingredients, including the cooled melted chocolate, and stir until smooth.
  5. Mix Wet and Dry Ingredients
    • Combine both mixtures until you have a thick and luscious batter.
  6. Fold in Chocolate Chips
    • Gently fold in 1/2 cup of the chocolate chips into the batter until evenly distributed.
  7. Transfer Batter to Loaf Pan
    • Pour the batter into the prepared loaf pan and smooth out the top using an angled spatula.
  8. Bake the Cake
    • Bake for 55-60 minutes, or until a toothpick inserted in the center comes out mostly clean.
  9. Sprinkle with Chocolate Chips
    • Remove the cake from the oven and immediately sprinkle the remaining 1/2 cup of chocolate chips on top.
  10. Cool and Enjoy
    • Allow the cake to cool in the pan for 10 minutes, then transfer it to a cooling rack. Enjoy while warm!
