Ingredients:
Crust:
- 2 cups (270g/9.60z) all-purpose flour
- 1 cup/2 sticks (226g/8oz) cold unsalted butter, cut into ½-inch pieces
- ½ cup (62g/2oz) powdered sugar, sifted
- ¼ teaspoon salt
1. Position and oven rack in the center of the oven and preheat the oven to 325°F. Butter a 9×13-inch pan, then line it with parchment paper.
2. In a food processor, combine the flour, butter, powdered sugar, and salt and mix until a coarse meal is formed. Evenly sprinkle the dough into the prepared pan.
3. Bake for 25-30 minutes until golden brown.
Filling:
- 2 cups (400g/14.2oz) granulated sugar
- 2 teaspoons grated lemon zest
- 4 eggs
- ½ cup (112g/3.9oz) fresh lemon juice, strained
- 1/4 cup (34g/1.2oz) all-purpose flour
- 1 teaspoon baking powder
1. In a medium bowl, combine the sugar and lemon zest and rub the sugar and zest together with your hands until the zest is fully coated.
2. Add the eggs and whisk until well combined. Add the lemon juice and whisk again. Finally, add the flour and baking powder and continue whisking for another minute until light and creamy.
3. Pour the mixture on top of the crust while the crust is still warm from the oven. Return to the oven and bake for 22 to 25 minutes, rotating the pan front to back halfway through, until the filling is set and jiggles just ever so slightly when the pan is moved.
4. Let the bars cool in the pan on a cooling rack for at least 1 hour. Top with powdered sugar🍰✨
