Easy Lemon Cake Recipe

Ingredients:

  • 1 ½ cups (300g) granulated sugar
  • ¼ cup (55g) unsalted butter, softened
  • 3  eggs, separated
  • 3/4 Cup + 1 tbsp (225g) Greek yogurt
  • finely grated zest of 2 lemons
  • 1 1/3 cups (175g) all-purpose flour
  • 2 tsps baking powder
  • 1 tsp salt
    For the icing
  • 1 cup (115g) confectioners’ sugar, sifted
  • about 1½ tbsps fresh lemon juice

Steps:

1. Preheat the oven to 350°F. Grease an 8-inch round cake pan and line the bottom with parchment paper.
2. Prepare the sugar by massaging it with lemon zest.
3. Beat together the sugar, butter, and egg yolks in a bowl.
4. Add the yogurt and lemon zest, and beat until smooth.
5. Gently fold in the flour, baking powder, and salt.
6. Whisk the egg whites to a soft peak, then carefully fold into the cake mixture.
7. Turn into the prepared pan and bake for 1-1¼ hours, or until the cake is well-risen and firm to the touch. Let cool in the pan for a few minutes, then turn out, peel off the parchment paper, and finish cooling on a wire rack.🍰✨
