Easy Vanilla Cupcakes Recipe

Ingredients:

  •  2 tbsp (28g) butter, softened
  • 3 tbsp oil
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp vinegar
  •  1/2 cup (120g) sour cream
  • 1/4 tsp salt
  • 1 1/2 cups (182 g) cake flour
  • 2 tbsp dry milk
  • 1/4 cup (60g) heavy cream
  • 2 large eggs + 1 egg yolk
  • 1 cup (200g) granulated sugar
  • 1 tbsp vanilla
  • 1 tsp lemon zest
  • 1 tsp maple syrup
    Steps:
    1. Preheat the oven to 350F and line a cupcake pan with liners.
    2. In a bowl sift the flour, baking soda, baking powder, salt, and dry milk.
    3. In another large bowl, Whisk together butter, oil, and sugar until light and fluffy (by hand or a mixer)
    4. Add eggs, lemon zest, vanilla, vinegar, and maple syrup and mix. Add sour cream and whisk.
    5. Add half of the sifted dry ingredients and fold. Then mix in the heavy cream and finally fold the remaining dry ingredients. Don’t overmix. The batter will be thick and lumpy.
    6. Fill half of cupcake liners with a scoop and bake for 15 minutes then test for doneness. A toothpick should come out clean with a few moist crumbs.🍰✨
