Starbucks Lemon Loaf Recipe
Ingredients:
- 2½ cups all-purpose flour (300g)
- ¾ tsp baking powder
- ¼ tsp salt
- 2 tbsp lemon zest (about 3 lemons)
- 150g sour cream
- 1 cup vegetable oil (240ml)
- 2 tbsp 25g fresh lemon juice
- 3 eggs
- 1 tbsp vanilla extract
- 1 cup sugar (200g)
- 1 tsp (5g) orange blossom (optional: if you don’t like its flavor replace with 1 tsp lemon juice)
- Lemon Icing:
1 cup (110g) powdered sugar.
1 tbsp fresh lemon juice I added a bit of orange blossom flavor too)
2 tbsp heavy cream (or 1tbsp milk)
Steps:
1. Preheat your oven to 350F and prepare an 8×4-inch loaf pan.
2. In a large bowl, combine the flour, baking powder, and salt.
3. In another bowl, massage the granulated sugar with the lemon zest until the sugar takes on a moist light yellow sandy texture.
4. Add the oil, eggs, fresh lime juice, orange blossom, and vanilla to the sugar mixture, whisking until well combined.
5. Pour the wet mixture into the bowl of dry ingredients and whisk until just combined.
6. Bake for 1 hour and 10 minutes, or until a toothpick inserted into the center comes out with few moist crumbs. (If it starts to brown too much on top, loosely cover it with foil after about an hour of
